From your GENES to your DIET

Ever wonder why you get sick (allergic reactions) to food that you eat like shrimps or peanut?  Scientists have determined that it is because of your genetic make-up, the DNA encoded gene(s).   DNA, blue print of life, as we know is in every single living cell.  Only less than 65 years ago in 1953, we came to know of DNA based on Watson and Crick publishing a one page seminal Nature article title "Molecular structure of Nucleic Acids".  Bury inside the nucleus of a single human cell contains 3 billion base pair of nucleic acids.  Fast forward to 2001, human ingenuity and hard work led to the publications of the complete sequencing of the 3 billon bp long human genome.  This is truly an amazing human triumphant accomplishment in recent history involving thousands of scientists worldwide. In 2017, a single medical molecular technician can sequence a single human genome within a single week making the sequencing of the human genome not the end of an amazing project but rather a turning point and beginning of a new era in human history.

In this presentation, Professor Leung will share and show the wonders generated from the knowledge of these four humble genetic codes of ATGC bring as well as how these knowledge start to transform our daily life in all fronts specifically the interaction of diet and the gut microbes resulting a new frontier of science called nutrigenomics directly benefitting our personal medical health and wellness challenging our traditional values and perspectives of food.
