The Japanese Sake Masterclass Series is designed as a series of short courses with different topics/themes. It is suitable to people who are sake industry practitioners and sake lovers, preferably with some foundational sake knowledge, in order to reap the most benefits from the courses.

Programme Details

R2This “Meeting and Tasting with Sake Brewer” course will be the first one in the masterclass series. This 2-hour masterclass aims to introduce one of the famous sake breweries, Imada Sake Brewing Co., Ltd. (今田酒造本店) in Hiroshima, Japan and students will have valuable chance to virtually meet and learn with one of the most inspiring sake brewers.

Our sake teacher Ms Naoko Ikeda (WSET Certified Sake Educator) will explain about Hiroshima, an important sake region, special ingredients such as rice and koji, as well as the latest rice polishing technique which are used to produce beautiful Fukucho (富久長) sakes. It is noteworthy that students will be introduced to a special type of rice (八反草), which is only planted for and brewed by this Brewery.

R1Prominent sake master brewer, Ms Miho Imada, will virtually share her passion and unique philosophy of sake production, so that students will gain a deeper knowledge and understanding about sake making and characteristics of her sake through tasting. A virtual visit of the historical sake brewery will be conducted through a video and the history and the spirit of ginjo sake making in Hiroshima will be explained too. Q&A session will be arranged at the end.

 

Profile of Imada Sake Brewing Co., Ltd.

sakeThe village of Akitsu in Hiroshima Prefecture, where the Imada Sake Brewing Co., Ltd. is located, is a quiet place facing the Seto Inland Sea. From long ago it has been famous as a village from which many toji (master brewers) and kurabito (brewery workers) come, and sake brewers from here can be found at breweries in the village of Saijo in Hiroshima, known as the local “sake capital,” as well as all over the country. Akitsu was also the home of Sanzaburo Miura, a brewing expert that, in the late 1800s and early 1900s, taught many brewers how to brew with soft water and make high quality ginjo-shu. This is why people say that ginjo-shu was born in Hiroshima. The name, Fukucho, was given to Imada sake by Mr. Miura.

The village of Akitsu; with a proud history of famous sake and known as the home of famous toji. Espoused by this father of Hiroshima sake, Sanzaburo Miura, are the words “A hundred tries, a thousand improvements” (百試千改). Fukucho carries on this enthusiastic attitude as a tradition today.

Naoko

Ms Naoko Ikeda (池田直子)

Ms. Naoko Ikeda 池田直子 is a Japanese Sake & Wine Specialist based in Hong Kong. Born in Hiroshima, she has lived in Japan and France. She is a WSET certified educator and is also conducting her tailor-made original classes. She has more than 20 years experiences in Food & Beverage Industry, as Educator, Speaker, Consultant, Buyer, Marketer and Sales Manager. She has worked for sake breweries and wineries. Currently she works for a major Champagne House. Her sake qualifications: WSET Level 3 Award in Sake Pass with Distinction (2018), Japan Sommelier Association Sake Diploma (2017) and SSI International Kikisake-shi (2017). Besides teaching, she also loves pairing her homemade food with sakes and working at production sites and wishes to spread her passion of appreciating sakes.

 

Miho

Ms Miho Imada (今田美穂)

Ms Miho Imada, 今田美穂 is a reputable Toji for Imada Sake Brewing Co., Ltd. (今田酒造本店) in Hiroshima, Japan. As a third generation Toji, Imada learned the art of sake from her father and grandfather and took over the family business. Currently, about 20 of the Japanese sake breweries are run by women, and Imada is one of the few female sake master brewers. Her Fukucho ginjo sake won a platinum award at Kura Master 2017, an annual contest selecting the best from over 550 Japanese sake brands, and many more awards. Imada is one of the inspiring and influential women leaders from around the world and she was awarded BBC's ‘100 Women’ 2020 and Forbes’ ‘50 Over 50: Asia’ 2022.

This is a part-time blended learning course. Ms Naoko Ikeda and students will attend class face-to-face in our classroom, while the master sake brewer, Ms Miho Imada will e-meet our students via zoom.  Throughout the class, English will be used as the main teaching medium and in lecture notes (supplemented with some Chinese terminologies for your easy understanding). Though Ms Miho Imada will speak Japanese in the class, Ms Naoko Ikeda will do the translation from Japanese into English. 
 
HKU SPACE has been using the following measures to protect the safety of our students/teachers/staff and reduce the chances of infection:

  • Temperature check at the entrance of the School campus
  • All students/teachers/staff need to wear a surgical mask at all times (except for wine/sake/coffee tasting and food pairing moments)

  • Regular sanitary / hygienic measures in the School campus

1. Cash, EPS, WeChat Pay Or Alipay

Course fees can be paid by cash, EPS, WeChat Pay or Alipay at any HKU SPACE Enrolment Centres.

2. Cheque Or Bank draft

Course fees can also be paid by crossed cheque or bank draft made payable to “HKU SPACE”. Please specify the programme title(s) for application and applicant’s name. You may either:

  • bring the completed form(s), together with the appropriate course or application fees in the form of a cheque, and any required supporting documents to any of the HKU SPACE enrolment centres;
  • or mail the above documents to any of the HKU SPACE Enrolment Centres, specifying “Course Application” on the envelope. HKU SPACE will not be responsible for any loss of personal information and payment sent by mail.
3. VISA/Mastercard

Applicants may also pay the course fee by VISA or Mastercard, including the “HKU SPACE Mastercard”, at any HKU SPACE enrolment centres. Holders of the HKU SPACE Mastercard can enjoy a 10-month interest-free instalment period for courses with a tuition fee worth a minimum of HK$2,000; however, the course applicant must also be the cardholder himself/herself. For enquiries, please contact our staff at any enrolment centres.

4. Online Payment

Online application / enrolment is offered for most open admission courses (enrolled on first come, first served basis) and selected award-bearing programmes. Application fees and course fees of these programmes/courses can be settled by using "PPS by Internet" (not available via mobile phones), VISA or Mastercard. In addition to the aforesaid online payment channels, new and continuing students of award-bearing programmes with available online service, they may also pay their course fees by Online WeChat Pay, Online Alipay or Faster Payment System (FPS). Please refer to Enrolment Methods - Online Enrolment  for details.

Notes

  • If the programme/course is starting within five working days, application by post is not recommended to avoid any delays. Applicants are advised to enrol in person at HKU SPACE Enrolment Centres and avoid making cheque payment under this circumstance.

  • Fees paid are not refundable except under very exceptional circumstances (e.g. course cancellation due to insufficient enrolment), subject to the School’s discretion. In exceptional cases where a refund is approved, fees paid by cash, EPS, WeChat Pay, Alipay, cheque, FPS or PPS by Internet will be reimbursed by a cheque, and fees paid by credit card will be reimbursed to the credit card account used for payment. 

  • In addition to the published fees, there may be additional costs associated with individual programmes. Please refer to the relevant course brochures or direct any enquiries to the relevant programme team for details.
  • Fees and places on courses cannot be transferrable from one applicant to another. Once accepted onto a course, the student may not change to another course without approval from HKU SPACE. A processing fee of HK$120 will be levied on each approved transfer.
  • HKU SPACE will not be responsible for any loss of payment, receipt, or personal information sent by mail.
  • For payment certification, please submit a completed form, a sufficiently stamped and self-addressed envelope, and a crossed cheque for HK$30 per copy made payable to “HKU SPACE” to any of our enrolment centres.
