Highlights

This programme is intended for people who have little or no prior knowledge of wines. It is suitable to those wine enthusiasts so that they can deepen and broaden their wine knowledge for social and leisure purpose; and those who wish to work with wines as part of a larger beverage portfolio in the retail, wholesale and hospitality sectors.

This programme is designed to provide a sound introduction to wines. Students will be introduced to the key stages in grape growing and winemaking, different types and styles of wines produced from internationally and regionally important grape varieties. Through a combination of tasting and theory, students will also learn how to interpret wine labels from the main wine-producing regions of the world, and provide basic guidance on appropriate selection and service, as well as understand the principles of wine tasting and evaluation.

This programme is very useful for those who wish to work with wines as part of a larger beverage portfolio in the retail, wholesale and hospitality sectors, since students will acquire the job skills and competencies to answer customer enquiries and provide recommendations for the storage and service of wine.

Intended Learning outcomes

On completion of the programme, students should be able to:

  • describe the key stages in grape growing and winemaking;
  • assess the environmental influences and grape-growing options in the vineyard and how these will impact the style and quality of wine;
  • discuss how winemaking and bottle ageing influence the style and quality of wine;
  • illustrate how environmental influences, grape-growing options, winemaking and bottle ageing influence the style and quality of wines made from the principal grape varieties;
  • explain the style and quality of wines produced from regionally important black and white grape varieties;
  • discuss how the production process can influence the styles of sparkling and fortified wines; and
  • outline the key principles and processes involved in the storage and service of wine, and in the pairing of food and wine.

Why HKU SPACE?

  1. Students can taste about 58 samples of wines during the course of their studies, and they are systematically arranged by classroom session.
  2. Our wine courses are taught by qualified wine professionals who are also experienced in wine education.
  3. Our wine courses will be delivered by a single teacher throughout the entire course to ensure consistency in content and teaching style.
  4. All wines are carefully and impartially selected from different recognized wine suppliers to suit the genuine needs of the courses.
  5. All wines are tasted according to WSET requirements as benchmarks samples from around the world.
  6. Small class-size in all wine courses brings about better teaching and learning, and enhances teacher-student interaction.

Programme Details
